Reverse sear steak
One of the easiest ways of consistently cooking a nice steak.
Notes
- 90 to 95ºF (32 to 35ºC) for medium-rare
 - 100 to 105ºF (38 to 41ºC) for medium
 
Ingredients
- Steaks (Thick cut)
 - Butter
 - Garlic
 - Thyme
 
Instructions
- Pat dry the steaks
 - Season generously with salt & pepper
 - Put a sheet of baking paper on a grill
 - Pre heat the oven to 275ºF (135ºC)
 - Place steaks in the oven and cook about 15 to 25 minutes, depending on the thickness. See notes for target temperatures of the steak.
 - Remove the steaks from the oven and set aside.
 - Heat the pan to high heat
 - Add a high smoke-point oil (veggie oil is good?)
 - Add the steaks to the pan (the should sizzle otherwise the pan is too cold)
 - Once one side has been seared add butter, thyme and garlic
 - Baske the steaks in the butter for even better crust.
