Dressing:

Instructions:

Cook the pasta according to instructions and let it cool.

Fry the bacon on low heat until crispy and brown.

Make the dressing by combining lemon juice, olive oil, garlic and salt & pepper.

Dice the bell pepper and cucumber, half the tomatoes and olives. Remove the parsley leaves from the stalks and give them a rough chop.

Start building the salad:

In a bowl add the pasta, top it with the veggies, bacon and shredded chicken breast. Pour over the dressing. Add a pinch of lemon zest. Toss the whole thing until everything is evenly covered in the dressing.
